A Guide to German Barbecue

BBQ Around The World | Germany

Many of the foods we traditionally associate with grilling and barbecuing in America today originated in Germany. A popular legend claims that the hamburger originated there when a cook in Hamburg built a sandwich with a fried sausage patty and a fried egg. It eventually became known as the hamburger, and it has obviously been Americanized throughout the years. The hot dog is another grilling favorite that traces its roots to Germany with the original frankfurter.
Today, BBQ Germany is very similar to American BBQ. However, there is one noticeable difference and that is the condiments Germans opt for to serve with their barbecue. The most popular condiment is mustard of all varities, from sweet to extremely spicy. For those who like spice, horseradish is frequently added to sauces and marinades for grilled meats. And when it comes to ketchup, Germans have developed a taste for curry in their ketchup. This Curryketchup is most often served on top of or alongside smoked sausages.

Although today most Germans use grills, the original method of barbecuing in Germany was over a schwenker. A schwenker is a fire surrounded by a tripod from which a grill suspended.
There’s no doubt the German influence has had a large impact on the world of BBQ. In fact, there are some circles that credit Germany with the birth of Texas BBQ. When early German immigrants came to the US, they brought brisket and it’s now well-loved low and slow cooking method. In the 1950s, a couple of German butchers put a brisket in a smoker and modern Texas BBQ was born.
